Consumer acceptance and willingness to pay for direct and indirect entomophagy

Abstract Over the last few years, interest on alternative protein sources, such as edible insects, has been growing rapidly. However, Western consumers’ acceptance of insects a food source is very low, mainly due to unfamiliarity with insect-based food. We investigate attitude and behavior estimate their willingness pay (WTP) premium for three products that vary between-subjects basis, direct or indirect consumption insects. The data were collected through an online questionnaire 451 consumers in Greece WTP was elicited using contingent valuation method (CVM). Our results show majority Greek are not willing energy bar cookie (direct entomophagy) they would require discount acquire products. On other hand, consumer higher gilt-head bream fed feed (indirect entomophagy). Results younger adults, looking new sources evaluating certification trust important innovative products, all associated WTP. Consumers positive average 15.8, 17, 31.8 per cent bar, cookie, bream, respectively, while discounts 43.8, 42.4, 30.7 cent, respectively.
